The Benijimin sweet potato is a distinctly Korean variety, also known as Korean goguma. It is sometimes called the "Hermès" of Korean sweet potatoes, and commands the highest wholesale price of any goguma cultivar.

The Brix sugar level is measurably higher than standard varieties. When baked or roasted, the flesh turns golden and creamy with a flavour closer to chestnut than a regular sweet potato.

**How to get the best baked sweet potato result:

  • Regular oven: preheat to 200°C, bake 50 minutes, flip at the halfway point
  • Air fryer: preheat to 180°C, cook 45 minutes, flip halfway
  • Steamed: 25–30 minutes over boiling water until a skewer passes through cleanly
